One of the few 'Tradizionale' balsamic vinegars, the Malpighi is one of the most respected of all the producers of true balsamic. The short, rounded, squat bottle is trade-marked by the official consortium, so unless your vinegar comes in one of these special bottles, it is NOT 'Tradizionale'. The 12 Year offers a perfect balance between sweet and sour, with a rich, viscous consistency that literally oozes out of the tiny bottle. Use sparingly and only for finishing.
