La Baleine is a naturally evaporated sea salt from the Aigues-Mortes saltworks, in Camargue, France. Salt has been produced on this site since before Roman times. The site itself is a nature preserve, so the conditions are quite similar to what they were in ancient times. The crystals crunch nicely between one's teeth and dissolve quickly upon contact with moisture. The salt is sold in two forms: 'gros' (coarse for grinding) or 'fin' (fine for pinching or use in a shaker).
