This opulent olive oil is made in the southeastern part of Sicily, where the groves sourced for this oil range can tower over a thousand feet above sea level! This offers perfect conditions for the cultivation and growth of several species of olives native to the region. Chemical fertilizers and pesticides are avoided. After harvesting by hand, the olives are pressed on a stone press and bottled without filtration. The oil possesses forceful aroma and shows a green/yellow color. It is rich and layered, but can show some 'bite' in the finish when it is first bottled. This evens out after some ageing.
